Apple Coffee Cake

Apple Coffee CakeIngredients

  • 5 C     tart apples, cored, peeled, chopped
  • 1 C     sugar or replace with 1/4 Tsp Stevia Concentrated Powder plus unsweetened applesauce
  • 1 C     dark raisins
  • 1/2 C pecans, chopped
  • 1/4 C vegetable oil
  • 2 tsp vanilla
  • 1 egg, beaten
  • 2-1/2 C  sifted all-purpose flour
  • 1-1/2 tsp  baking soda
  • 2 tsp   ground cinnamon

Directions

  1. Preheat oven to 350º F.
  2. Lightly oil a 13x9x2-inch pan.
  3. In a large mixing bowl, combine apples with sugar or Stevia powder and applesauce, raisins, and pecans; mix well. Let stand 30 minutes.
  4. Stir in oil, vanilla, and egg.
  5. Sift together flour, soda, and cinnamon;
  6. Stir into apple mixture about 1/3 at a time just enough to moisten dry ingredients.
  7. Turn batter into pan.
  8. Bake 35 to 40 minutes.
  9. Cool cake slightly before serving.

Yield: 20 servings
Serving Size: 3-1/2-inch x 2-1/2-inch piece

I can eat pasta and other foods that are high in calories or carbohydrates as long as I go to the gym.

Going to the gym does not give you permission to eat just anything.  In fact, many people actually gain weight when they start exercising partly because they think that exercising negates the harmful effects of calories and carbohydrates in the foods that they like to eat. However, for a host of reasons, working out does not give you the freedom to eat anything you want.

One reason is simply mathematical: even if you exercise vigorously for an hour, it’s still unlikely that you will burn off more than 800 calories. However, one pasta dish can easily add 1,500 calories to your daily diet – and that doesn’t even count the bread and drink that might accompany the pasta dish. As such, you will consume more calories than you work off and those extra calories will lead to weight gain. Make a habit to check blood pressure regularly through blood pressure monitor.

If you are working out to reduce your weight and improve your overall health, then you need to also pay attention to the food that you eat. Healthy diabetes diet plan can not only complement and balanced lifestyle, but it can also make your workout easier and more energetic.

After all, dining out removes some of the control you have over what ingredients and options you have for your diabetic meals. However, learning the dining out ropes may seem intimidating at first, but once you have a handle on it, dining out can be a true pleasure – and a relief if you spend much of your time in the kitchen.

As a recently diagnosed Diabetic, you should keep in mind that the principles of good nutrition are still in effect. Therefore, just because the menu offers high sugar options doesn’t mean that you should compromise your nutrition standards for the restaurant. Even if the menu does not offer items that are particularly low in sugar, you can (and should) always request that the chef take special care with your diabetes diet recipes. After all, your health is on the line! Many restaurants have special recipes for customers wishing to order sugarfree desserts or sugar free recipes. Sometimes, all you need to do is ask.

What to do when dining out:

•    Fried foods are tempting appetizers. However, most menus also offer fresh fruit, seafood or soup options. Select the Salmon seafood or soup.
•    When ordering eggs at breakfast, avoid scrambled eggs or eggs that could be mixed with butter or cream. Instead, opt for a boiled or poached egg.
•    Always ask for the dressing on the side. Many restaurants also offer sugarfree desserts in addition to traditional deserts or dressings.
•    Choose whole-grain breads when ordering rolls, crackers and biscuits. If whole-grain breads are not options, avoid eating breads made with refined flour.

•    Select lean meats, such as meats ending in “loin” (tenderloin, sirloin). Always ask for the gravy or sauce on the side of the dish.
•    For dessert, order fruit, yogurt or sugar-free ice cream. Though it may be tempting, unless there are other sugar free desserts on the menu, stick with the item with the lowest sugar level.
•    Never drink soda. Always opt for diet beverages, unsweetened tea or water.
•    Eat small portions (like you may at home, and take a doggy bag.)
•    Even when dining out, remember that you may have a special diabetes meal planning. Stick to it.

•    Fat free doesn’t mean sugar-free. When in doubt, ask your waitress or chef for ingredients, or simply skip the item.
•    Plan to take some of your food home, even before eating. That way, you will avoid over-eating.
•    Approach buffets very carefully – start with a salad, take as much vegetables as you would like, avoid those croutons; tuck in the tomatoes; some sunflowers seeds, with no-fat or low-fat dressing and make that your first course. On the return trip, have more salad or follow the above guidelines for your entrée course.

For diabetic dessert, try the fruit. Remember some buffets, use canned fruit with sweetened juices, watch those; too much sugar. Fresh fruit is always best and they generically have those around the salad bar as well.

Dining out can often is a huge relief for families in which one person has Diabetes, but not everyone. Diabetic Nerve Pain and Treatment

It’s nearly summer, time for a trip to the beach, the mountains, or beyond. Wherever you’re vacationing, some advance planning will help ensure you have a healthy trip. Before you travel, here is what to do:

1. Prepare your paperwork

Before you hit the road, gets a letter from your doctor explaining how you take care of your diabetes. If you use insulin or any other medications or lancing devices, it should list them. In case of emergency, you should also have a prescription for insulin or oral medication.

Are you traveling outside the U.S.? Be aware that prescription laws may be different in other countries than they are in the U.S. You can get a list of International Diabetes Federation groups from http://www.idf.org.You may also want to get a list of English-speaking doctors in the country or countries you plan to visit. 2. Pack smart

•    All oral medications

•    An air-tight snack pack of crackers or cheese, peanut butter, fruit, a juice box, and hard candy or glucose tablets

3. Get ready to eat
